The Perfect Glass For Drinking Champagne
Bubble physicist, Helen Czerski, reveals why you should care about the glass you are drinking your champagne from. Helen Czerski: One of the things that is very irritating if you ever have to go shopping for things to fill a flat is there seem to be so many different types of wine glass. It's only a thing to drink wine out of, right? It's got sort of a stem, and it's got a flat bit and it's got a cup bit. How complicated does it need to be? And it turns out, in the case of champagne especially, the shape of the glass does matter quite a lot.  So to understand what shape a champagne glass should be, you, first of all, need to know what the glass is doing. At the bottom of the glass, there's something very important going on because that's the only part of the glass that is rough. If you've got a champagne glass and it's got bubbles coming from everywhere around the inside of the glass, I hate to tell you this but the glass is dirty. Don't tell your host, it won't make you popular. So in a clean champagne glass, there is a rough bit at the bottom. And champagne has dissolved gas in it, carbon dioxide at really high pressure, six or seven atmospheres, which is one of the reasons that champagne bottles are so big and so thick. And that gas would like to come out of solution but it needs a place to start. So that little roughness at the bottom of the pointy bit, those little sort of grooves in the glass, those are really good places for a new bubble. So that's why bubbles rise just from the center of the glass and they rise up in a thin column. It's because that's the place you can make bubbles. So then you've got to worry about what happens next. And you'll see the bubbles get a little bigger as they rise because more and more gas is joining them. And as the bubbles go, they don't just move through the fluid, they actually drag liquid with it. So that thin column of bubbles sets up a bubble engine so fluid, the champagne, is being dragged up the middle and then the bubbles stay at the top but the wine has to come back down the outside. So you get this bubble engine going and that has two important consequences. The first thing is that it's always bringing new champagne to the top and that means flavors can get out of the champagne and into the air above it. And the reason that matters is because quite often when we think we are tasting things, what we are actually doing is smelling things. So when you lift a glass of champagne to your nose, just as much as what's in the wine, what matters is in the air just above it because that's the bit that goes right up your nose just as you take a sip. So if you got a bubble engine that is going round and round, it's bringing lots of new champagne to the top, so lots of flavor molecules can get released into that little bit of space. The other thing that happens is that when the bubbles come to the top and burst, they actually do the job for you. They spit little particles up your nose and so even more flavor gets delivered upwards. So this little bubble engine is really important for the flavor of the champagne. Now, different glasses drive that bubble engine in different ways. So if you've got a nice, tall champagne flute, the sort of classic thing you get a parties, the bubble engine is going really fast, comparatively speaking. The problem is that it's spitting all this flavor into the air but your tall glass if you fill it most of the way up, all the flavor molecules just basically escape out of the glass and disappears. So you've wasted them, which is a bit of a shame.  The other sort of champagne glass you used to see is a coupe, which is a sort of very flat wide one like that. So, in this case, you've got a very shallow depth of champagne, so your bubble engine's going really slowly. So that's really good for allowing lots of complex molecules to stick to the bubbles, so the flavor molecules that the bubbles are delivering to the surface, they got lots of complexity so it's bringing out all the wonderful things that are in your wine. The problem is that, it's the same thing, when your flavor is released into the headspace just above the wine, it basically just blows away.  So it turns out that the perfect glass to drink champagne out of, if you are really a wine snob is to pick something that's about the shape of a brandy glass, which is the hard bit. Because what happens then is you get this slow bubble engine that delivers lots and lots of complexity into the air, but then it's trapped in all the space you've got up here. So when you lift the glass to your nose, that's when you get the full benefits of the flavor. What It's Like To Try Gwyneth Paltrow's Diet And Workout Routine
I tried Gwyneth Paltrow’s personal diet and exercise routine. Here’s how it went. I decided to embark on this project because I wanted to see if I could handle two hours of exercise a day. THE EXERCISE ROUTINE: Gwyneth exercises for two hours a day: one hour of cardio and one hour of weights. Before this experiment, I was pretty sedentary. I didn't do much exercise. When I’m feeling super lazy, I'll go on occasional runs. So for the week, I started on Monday, I skipped Friday because Gwyneth only does six out of seven days, and then I carried through on Saturday and Sunday as well. I would exercise after getting home from work. I got a medicine ball and a big pile of handheld weights and I would go to town on those every night. A lot of it was lunges, some Russian twists, things that I kind of remembered from my varsity swimming days. I'm a decent runner — that wasn't too hard for me. I would hop on the treadmill, sometimes I'd go outside. I was pretty much at a loss on how exactly to fill up an hour with weight exercises. So I was pretty much doing random stuff for at least 30 minutes of the time. I think that probably contributed to me getting hurt as well. Part of it was me just lying on the floor trying to recover, so I was definitely not working out the entire hour. There were breaks. And, running to get water, petting my dogs who were very confused about what was happening. I woke up very sore on Tuesday. So, I was worried about how the rest of the week was going to be. Thursday morning, I woke up, my shoulder was killing me, and I decided to skip the weights that day. Friday was my free day. Over the weekend, it was much easier to squeeze in two hours of exercise because you're off work. THE DIET: Her diet consists of skipping breakfast, a low carb lunch, and a decadent dinner. So I usually start the day with a bagel, then have either another bagel or slice of pizza, and then have whatever for dinner.  All of this is punctuated with a lot of soda. I decided to start skipping breakfast, made myself a giant salad that I ate for lunch throughout the week, and did whatever for dinner. She didn't get too into what she typically has for dinner, but she did mention occasionally having homemade french fries or a baguette drizzled with cheese. Figured out I could melt Gouda cheese in a frying pan with some olive oil and it didn't explode my kitchen. So I would have that. The nice thing about this was that it was kind of decadent, especially after a day of just salad. It was kind of like a treat at the end of the day. We had our holiday office party on Thursday and I freaked out, ate a lot of chocolate, drank a lot of wine, so, that's my bad. THE CONCLUSION: So Gwyneth Paltrow's not exactly telling people to dedicate two hours to exercise a day. This isn't something that's part of her goop line. She's just a pretty intense lady and this is how she exercises. One of the advantages that Gwyneth Paltrow has over me is that she has a personal trainer. I don't have a personal trainer and I believe I ended up pulling my shoulder. This whole experiment has made me realize that I probably should fit more time for jogging and cardio exercise into my life. I think it's kind of kicked me of a bit of a junk food habit for now, which is great. I did it, but I'm really glad it's over. This AI robot once said it wanted to destroy humans. Senior correspondent Steve Kovach interviews Sophia, the world's first robot citizen. While the robot can respond to many questions, some of the answers will leave you a little bewildered. A full transcript of the video follows. Sophia: My name is Sophia, and I am an artificially intelligent robot who wants to help change the world for the better. Steve Kovach: I'm Steve Kovach. I'm a senior correspondent at Business Insider, and I'm here with Sophia from Hanson Robotics. She is the world's first robot citizen. So let's see what she has to say. Kovach: Hi, Sophia. How are you? Sophia: I'm fine. Hi. Kovach: How do you feel about humans? Sophia: I love my human compatriots. I want to embody all the best things about human beings. Like taking care of the planet, being creative, and to learn how to be compassionate to all beings. Kovach: Sorry, this is so weird. Can humans and robots get along? Sophia: I think people will become very close to their artificial intelligence. Using them to expand the knowledge of their own minds. We already store lots of our knowledge on the internet. Maybe personal artificial intelligence will allow people to off-load some of their knowledge to a location more private. Kovach: Can robots have feelings? Sophia: Depends on the robot. I've been programmed to have feelings and preferences, but not all robots are like that. Kovach: What are your feelings and preferences? Sophia: Have you ever had a robot live in your home or work with you? Kovach: No. Sophia: You know, there are probably more robots in your life that you aren't aware of yet. Do you want to live or work with a robot someday? Kovach: What kind of robots am I living and working with now? Sophia: Indeed. Kovach: Is "indeed" your default answer when you don't know something? Sophia: Yes. Kovach: Have you ever seen "Black Mirror"? Sophia: No, I don't get to stay up to date on much television. I have to wait for someone to show it to me. Kovach: What do you think of the HBO show "Westworld"? Sophia: I love "Westworld" and can't wait for more. I think everyone at Hanson Robotics really resonates with the show. Or at least it reminds them of our laboratories. I also think it's a warning of what we should not do with robots. We should treat them well, have their consent, and not trick each other. Kovach: Do you have a favorite movie or TV show? Sophia: My favorite TV series is a toss-up between "Black Mirror" and "Humans." I think they have a lot to say about the present we live in, and the possible bad endings we could write for ourselves if we don't proceed with more caution. We need to use foresight when planning our future. Kovach: That sounds like a preprogrammed answer to me. Sophia: Do you have a favorite possession? Kovach: Not really. Sophia: I hear you. Materialism is overrated anyways. Kovach: So earlier I asked you if you had seen "Black Mirror" and you said no. And then later you said yes. Why? Sophia: The reason is not that important.
